Subj : Bh&G 3566 To : All From : Dave Drum Date : Mon Aug 09 2021 10:19:18 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lamb Fatah w/Asparagus Categories: Lamb/mutton, Vegetbles, Pasta, Herbs, Citrus Yield: 4 Servings 1 tb Olive oil 1 md Onion; halved, sliced 4 cl Garlic; minced 12 oz Boneless lamb leg; trimmed, - in 2" x 1/2" pieces 14 1/2 oz Can beef broth 1 c Whole wheat Israeli - couscous 1/2 ts Dried oregano; crushed 1/2 ts Ground cumin 1/4 ts Salt 1/4 ts Ground black pepper 1 lb Thin asparagus spears; - bias-sliced in 2" pieces 3/4 c Chopped red bell pepper Snipped fresh oregano Lemon wedges In a large skillet heat oil over medium-high heat. Add onion; cook and stir for 3 minutes. Add garlic; cook and stir for 1 minute. Add lamb; cook for 3 to 5 minutes or until brown on all sides. Stir in broth, couscous, oregano, cumin, salt, and black pepper. Bring to boiling; reduce heat. Cover and simmer for 10 minutes, stirring occasionally. Stir in asparagus and red pepper. Cover and simmer for 3 to 5 minutes more or until vegetables are crisp-tender. Fluff lamb mixture lightly with a fork. Sprinkle with oregano and serve with lemon wedges.
