Subj : BH&G 3492 To : All From : Dave Drum Date : Mon Aug 02 2021 06:04:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Edamame Chowder Categories: Poultry, Beans, Vegetables, Chilies, Dairy Yield: 6 Servings 1 tb Vegetable oil 1 lb Skinned, boned chicken; in 1 " pieces 12 oz Pkg frozen sweet soybeans 1 1/4 c Coarse chopped bell pepper 1 c Chopped onion 2 Fresh jalapenos; seeded, - fine chopped 2 ts Ground cumin 2 ts Ground coriander 1/2 ts Salt 1/4 ts Ground black pepper 29 oz (2 cans) chicken broth 8 oz Dairy sour cream 3 tb All-purpose flour 2 md Zucchini; halved longway Shredded Monterey Jack; - (opt) Snipped fresh cilantro; - (opt) In a large skillet heat oil over medium-high heat. Add chicken; cook and stir until light brown. In a 3 1/2 or 4 quart slow cooker combine chicken, frozen soy beans, sweet pepper, onion, jalapeno peppers, cumin, coriander, salt, and black pepper. Pour broth over mixture in cooker. Stir to combine. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3 1/2 to 4 hours. If using low-heat setting, turn cooker to high-heat setting. In a small bowl combine sour cream and flour. Thinly slice zucchini. Stir sour cream mixture and zucchini into chicken mixture. Cover and cook for 20 to 30 minutes more or until mixture is thickened and zucchini is crisp-tender. If desired, serve topped with cheese and cilantro.
