Subj : Bh&G 3450 To : All From : Dave Drum Date : Tue Jul 27 2021 06:34:28 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Crab Cakes w/Orange Aioli Categories: Seafood, Cirtus, Breads, Vegetables, Dairy Yield: 2 Servings 1 Egg white; lightly beaten 2 tb Chopped green onions 2 tb Chopped red sweet pepper 2 tb Mayonnaise 1 1/2 ts Worcestershire sauce 1 ts Dijon-style mustard 1/2 ts Old Bay seasoning 1/4 ts Lemon-pepper seasoning 10 oz Cooked crabmeat +=OR=+ 12 oz (2 cans) lump crabmeat, - drained, cartilage picked 1/2 c Panko 1 tb Butter 1 tb Oil Spinach leaves (opt) MMMMM------------------------ORANGE AIOLI----------------------------- 1/4 c Mayonnaise 1/4 c Sour cream 1/4 ts Fine shredded orange peel 1 tb Orange juice 1 tb Snipped fresh chives 1/4 ts Ground coriander In a small bowl stir together mayonnaise, sour cream, finely shredded orange peel, orange juice, chopped fresh chives, and ground coriander. In a large bowl combine egg, green onions, red pepper, mayonnaise, Worcestershire sauce, mustard, Old Bay seasoning, and lemon-pepper seasoning. Add crabmeat; mix well. Shape into four patties. Press panko onto both sides of each patty. In a large skillet heat 1 tablespoon of the butter and 1 tablespoon of the oil over medium heat. Add patties and cook for 8 to 10 minutes or until golden and heated through, turning once. If desired, serve warm on a bed of spinach. Serve with Orange Aioli.
