Subj : BH&G 3330 To : All From : Dave Drum Date : Thu Jul 15 2021 10:21:20 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Berry-Orange Coffee Cakes Categories: Breads, Cheese, Fruits, Citrus, Nuts Yield: 15 Servings 2 c All-purpose flour 1 1/2 ts Ground cinnamon 1/2 ts Baking soda 1/2 ts Baking powder 1/3 c Butter; softened 1/4 ts Salt 1/2 c Packed brown sugar 1/2 c Granulated sugar 1 c Whole-milk ricotta cheese 1 lg Egg 1 tb Finely shredded orange peel 1 tb Orange juice 1/2 ts Vanilla 1 1/2 c Fresh cranberries; coarse - chopped 2 tb Fine chopped crystallized - ginger MMMMM------------------------ORANGE GLAZE----------------------------- 1 c Powdered sugar 1 tb Orange juice 1/2 ts Vanilla 2 tb Butter; melted 1/2 ts Fine shredded orange peel 1/2 c Walnuts; toasted, chopped Set oven @ 350ºF/175ºC. Grease fifteen 2 1/2" muffin cups. In a bowl combine flour, cinnamon, baking soda, baking powder, and salt. In a large bowl beat butter and sugars with an electric mixer on medium speed until fluffy. Add ricotta, egg, orange peel and juice, and vanilla. Add flour mixture. Stir just until combined. Fold in cranberries and ginger. Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until toothpick inserted near center comes out clean. Cool in pans 5 minutes. Remove; cool slightly. Spoon on glaze. Sprinkle with nuts and additional orange peel, if desired. Makes 15 cakes. Bake for 20 to 25 minutes or until a toothpick inserted near centers comes out clean. Cool in pan on rack 5 minutes.
