      Title: Endive Chicken Boats
 Categories: Poultry, Greens, Herbs, Citrus, Nuts
      Yield: 30 Servings
 
      1    2 pound purchased roasted
           - chicken
    2/3 c  Peanut sauce
    1/4 c  Honey-roasted peanuts;
           - chopped
    1/4 c  Snipped fresh cilantro
      2 tb Lime juice
      1 tb Packed brown sugar
      4    Heads Belgian endive;
           Separated into leaves (abt
           - 30 leaves)
           Snipped fresh cilantro
           - (opt)
 
  Remove and discard skin and bones from chicken; chop
  chicken (you should have about 3 cups).
  
  In a large bowl, combine peanut sauce, peanuts, 1/4 cup
  cilantro, lime juice, and brown sugar. Stir in chicken.
  Spoon mixture onto endive leaves. If desired, garnish
  with additional cilantro.
