Subj : BH&G 3249 To : All From : Dave Drum Date : Wed Jul 07 2021 05:49:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pesto Penne w/Deli-Roasted Chicken Categories: Pasta, Poultry, Sauces, Cheese, Vegetables Yield: 4 Servings 8 oz Dried penne, mostaccioli, or - bow tie pasta 2 c Broccoli florets 7 oz Purchased basil pesto 2 1/2 c Coarse chopped deli-roasted - chicken 7 oz Jar roasted red sweet -peppers; drained, in strips 1/4 c Fine shredded Parmesan - cheese Fine shredded Parmesan - cheese (opt) 1/2 ts Coarse ground black pepper Cook pasta according to package directions, adding broccoli the last 2 minutes of cooking. Drain, reserving 1/2 cup of the pasta water. Return drained pasta and broccoli to saucepan. In a small bowl combine pesto and the reserved 1/2 cup pasta water. Add chicken, roasted peppers, and the pesto mixture to pasta in saucepan. Stir gently to mix. Cook over medium heat until heated through. Stir in the 1/4 cup Parmesan cheese. Divide the pasta mixture among warm serving bowls. If desired, top with additional Parmesan cheese. Sprinkle with black pepper and serve immediately.
