On a baking sheet arrange muffin halves, cut sides up. Top each with cheese, bacon, and eggs. Broil 4" from the heat about 2 minutes or until muffins are lightly toasted and cheese melts. Meanwhile, in a small saucepan whisk together cream, mustard and Cajun seasoning. Bring to a simmer over medium heat; simmer about 3 minutes more or until slightly thickened. To serve, spoon cream sauce over each toast and sprinkle with green onion. If desired, sprinkle with additional Cajun seasoning.
