Subj : BH&G 3198 To : All From : Dave Drum Date : Fri Jul 02 2021 10:58:32 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Rosemary Porterhouse Steaks w/Olive Mayo Categories: Beef, Herbs, Sauces Yield: 5 Servings 1 c Mayonnaise 1/4 c Pitted Kalamata olives; - chopped 1 tb Fine chopped fresh dill 1 cl Garlic; minced 2 Porterhouse steaks; cut 1 - 1/4" thick 1 tb Extra virgin olive oil 1 tb Fine chopped fresh rosemary 3/4 ts Salt 1/2 ts Fresh ground black pepper Snipped fresh rosemary - (opt) Herbed Potatoes & Squash - (Separate Recipe) FOR OLIVE MAYO: in bowl combine mayonnaise, olives, dill, and garlic. Cover; refrigerate up to 1 week. Brush steaks with oil. Combine rosemary, salt, and pepper; rub on steaks. Let stand at room temperature for 30 minutes. For charcoal grill, place steaks on rack directly over medium-hot coals. Cover and grill 9 to 11 minutes for medium rare, turning once. (For gas grill, preheat; set to medium-high. Cover and grill as above.) Sprinkle steaks with fresh rosemary; cut in serving portions. Serve with Olive Mayo and Herbed Potatoes and Squash. Serves 4 to 6.
