      2 sl Rustic bread
      2 lg Eggs; poached
     70 g  Smoked salmon
      1 tb Dijon mustard
           Salt & pepper
 
  Poach your eggs and toast the bread.
  
  Spread half the dijon on each piece of toast and lay
  half the smoked salmon on each piece.
  
  Place a poached egg on each toast piece and season
  with salt and pepper
