Subj : BH&G 3137 To : All From : Dave Drum Date : Sat Jun 26 2021 10:39:28 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pretzel Chicken w/Fig Mustard Dip Categories: Poultry, Breads, Herbs, Fruits Yield: 6 Servings 2 1/2 c Honey mustard & onion - flavoured pretzel pieces 1 ts Ground cumin 2 lg Eggs; lightly beaten 12 Chicken drumsticks (3 1/2 - lbs); skinned Nonstick cooking spray 1/3 c Fig jam or apricot jam 1/4 c Grainy mustard Thyme leaves Set oven @ 425ºF/218ºC. Place pretzels in a resealable plastic bag. Use a rolling pin, crush pretzels. Add cumin; shake to mix. Place beaten eggs in a shallow dish. Dip drumsticks, one at a time, in eggs; let excess drip off. Add chicken to bag; shake gently to coat. Coat roasting rack with nonstick cooking spray and place over a foil-lined baking pan. Transfer chicken to roasting rack. Bake 40 to 50 minutes until golden brown and juices run clear. Transfer chicken to platter; sprinkle with thyme leaves, if desired. For Fig Mustard Dip, in a small bowl stir together fig jam and mustard. Serve with chicken.
