Subj : BH&G 3125 To : All From : Dave Drum Date : Fri Jun 25 2021 11:16:22 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Thai Pork Shredded Tacos w/Sriracha Slaw Categories: Pork, Citrus, Chilies, Vegetables, Breads Yield: 32 Servings 32 oz Pork tenderloin; trimmed 1/4 c Lime juice 1/4 c Soy sauce 2 tb Honey 2 tb Grated fresh ginger 4 cl Garlic; minced 1/2 ts Crushed red pepper 32 (6") corn tortillas MMMMM-----------------------SRIRACHA SLAW---------------------------- 3 c Coleslaw mix 1 1/2 c Fine shredded red cabbage 3/4 c Snipped fresh cilantro 3/4 c Mayonnaise 3 tb Sriracha sauce 3 cl Garlic; minced Salt & black pepper In a medium bowl combine coleslaw mix, cabbage, cilantro, mayonnaise, Sriracha sauce, and garlic. Season to taste with salt and black pepper. Place meat in a 4-quart slow cooker. In a bowl combine the next six ingredients (through crushed red pepper). Pour over meat. Cover and cook on low for 4 to 5 hours or on high for 2 to 2 1/2 hours. Remove meat, reserving cooking liquid. Shred meat using two forks and toss with cooking liquid to moisten. To serve, divide meat mixture among tortillas and top with Sriracha Slaw.
