Subj : BH&G 3103 To : All From : Dave Drum Date : Wed Jun 23 2021 11:29:08 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken In Avocado-Buttermilk Marinade Categories: Poultry, Chilies, Dairy, Fruits, Citrus Yield: 4 Servings 3 1/2 lb (8) bone-in chicken thighs 1/2 ts Salt 1 Avocado; halved, seeded, - peeled, cut up 1 c Buttermilk 1 1/2 ts Fine shredded lime peel 2 tb Lime juice 2 Fresh jalapenos; halved, - seeded 1/2 ts Ground cumin - Avocado slices (opt) 4 Lime wedges Sprinkle chicken with salt. Place chicken in a freezer bag. For marinade, in a blender or food processor combine cut-up avocado, buttermilk, lime peel, lime juice, jalapeno peppers, and cumin. Cover and blend or process until smooth. Pour over chicken. Seal bag; turn to coat chicken. Freeze for up to 4 months. To serve, thaw in the refrigerator overnight. Set oven @ 375ºF/190ºC. Drain chicken, discarding marinade. Place chicken on a rack in a shallow baking pan. Bake for 60 to 75 minutes or until done. Serve chickenn with avocado slices and lime wedges.
