      Title: Denver Potato Casserole
 Categories: Five, Pork, Potatoes, Cheese, Vegetables
      Yield: 4 Servings
 
      4 md Yukon gold potatoes; thin
           - sliced
      8 oz Cooked ham; cubed
      1 md Bell pepper; chopped
      1 sm Sweet yellow onion; chopped
      1 c  Shredded CoJack cheese
 
  Set oven @ 350ºF/175ºC.
  
  Grease a 2 quart square baking dish; layer half of the
  potatoes, half of the ham, half of the sweet pepper, half
  of the onion, and half of the cheese in prepared baking
  dish. Repeat with the remaining ham, sweet pepper, and
  onion. Top with the remaining potatoes.
  
  Bake, covered, in preheated oven for 45 minutes. Uncover
  and bake about 15 minutes more or until potatoes are
  tender. Sprinkle with remaining cheese. Bake, uncovered,
  about 5 minutes more or until cheese is melted.
  
  Makes 4 servings.
