Subj : St. Benno 12 To : All From : Dave Drum Date : Tue Jun 15 2021 17:21:26 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mario & Benno's Crazy Cowboy Cookies Categories: Cookies, Grains, Snacks, Nuts Yield: 18 Servings 2 c Whole wheat flour 1 1/2 ts Salt 1 ts Baking soda 1 ts Baking powder 1 1/2 c Old-fashioned rolled oats; - (not instant) 1/2 c Unsweetened shredded - coconut 1 c Unsalted butter; softened 1/2 c Granulated sugar 1 c Light brown sugar; packed 2 lg Eggs 2 ts Pure almond extract 1 1/3 c Butterscotch chips Set oven @ 350ºF/175ºC. In a medium bowl, whisk together the flour, salt, baking soda, baking powder, rolled oats, and coconut. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars together on medium speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides of the bowl and add the eggs, one at a time, beating well after each. Add the almond extract and beat again to incorporate. Turn the mixer down to low and add the dry ingredients, mixing until just barely combined. Remove from the mixer and add in the butterscotch chips either with a spatula or by hand. I prefer to knead inclusions in by hand to ensure they're distributed evenly. Using a small cookie dough scoop or a tablespoon, portion the dough onto the baking sheets about 2 inches apart to allow for spreading (if you'd prefer larger cookies, use a soupspoon to portion the dough and space them about 3 inches apart). Bake for about 10-11 minutes, until lightly golden brown around the edges, rotating the baking sheet halfway through. Remove from the oven and allow to rest on top of the stove for about 3 minutes, then transfer the pan to a wire rack to cool for a few minutes more before removing the cookies from the pan and allowing them to cool completely.
