Subj : BH&G 3022 To : All From : Dave Drum Date : Tue Jun 15 2021 11:29:20 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sweet & Spicy Party Wings Categories: Appetisers, Poultry, Vegetbles, Chilies Yield: 10 Servings 6 lb Chicken wings; (24) tips - reserved for stock, wings - split 4 cl Garlic; thin sliced 1/2 c Unsalted butter; melted 1/2 c Honey 1/4 c Bottled green hot pepper - sauce 3 tb Grated fresh ginger 1 ts Kosher salt 4 Jalapenos; seeded, chopped Set oven @ 450ºF/232ºC. Line two 15" x 10" x 1" baking pans with nonstick foil; set aside. Cut off and discard tips of chicken wings. Cut wings at joints to form about 48 pieces. Bring a large pot of heavily salted water to boiling. Add chicken pieces and garlic. Simmer, uncovered, 8 minutes; drain. Pat chicken wing pieces dry with paper towels. Arrange pieces in prepared baking pans. Bake on separate oven racks for 30 minutes or until done, rearranging pans halfway through baking. Meanwhile for sauce, in a small saucepan stir together butter, honey, hot pepper sauce, ginger, and kosher salt. Bring mixture to boiling. Reduce heat and simmer, uncovered, for 4 minutes or until sauce is slightly thickened, stirring occasionally. To serve, place baked wings in a large serving bowl. Add honey sauce. Toss to coat.
