Subj : BH&G 2864 To : ALL From : DAVE DRUM Date : Sun May 30 2021 13:39:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Citrus-Herb Marinated Chicken Categories: Poultry, Citrus, Herbs, Vegetables Yield: 4 Servings 4 Skinned, boned chicken - breast halves 1/3 c Lemon or orange juice 1 tb Honey 1 tb Olive oil 1 tb Snipped fresh thyme - +=OR=+ 1 ts Dried thyme; crushed 2 ts Snipped fresh rosemary - +=OR=+ 1/2 ts Dried rosemary; crushed 2 tb Fine chopped shallot 1 cl Garlic; minced 1/2 ts Salt 1/4 ts Fresh ground black pepper - Lemon or orange wedges - (opt) Place chicken breast halves in a resealable plastic bag set in a shallow dish. For marinade, stir together lemon juice, honey, olive oil, thyme, rosemary, shallot, garlic, salt, and pepper. Pour over chicken; seal the bag. Marinate in the refrigerator for 2 to 4 hours, turning the bag occasionally. Preheat broiler. Drain chicken, reserving marinade. Place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 6 minutes or until light brown. Turn chicken and brush lightly with reserved marinade. Discard any remaining marinade. Broil for 6 to 8 minutes more or until chicken is no longer pink. If desired, serve with lemon wedges.
