Subj : BH&G 2862 To : ALL From : DAVE DRUM Date : Sun May 30 2021 13:37:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sesame Soba & Steak Categories: Beef, Pasta, Citrus, Vegetables, Herbs Yield: 6 Servings 12 3/4 oz Pkg soba noodles 1 tb Olive oil 1 lb Flank steak 3/4 ts Salt 1/8 ts Black pepper 3 tb Tahini paste 3 tb Fresh lemon juice 2 tb Harissa 2 tb Honey 2 ts Sesame oil 1 pt Grape tomatoes; halved 1/2 English cucumber; halved, - sliced 1/2 c Fresh mint; rough chopped 2 tb Sesame seeds - Crumbled feta (opt) Bring a large pot of lightly salted water to a boil. Add soba; cook 3 minutes. Drain and rinse in cold water. Add olive oil to a large skillet over medium-high heat. Pat steak dry and season with 1/4 tsp of the salt and the pepper. Cook 5 minutes per side, until medium-rare (145 degrees ). Let rest 5 minutes, then thinly slice against the grain. In a large bowl, whisk 1/2 cup water, tahini, lemon juice, harissa, honey, sesame oil and remaining 1/2 tsp salt. Toss with cooked soba, sliced steak, tomatoes, cucumber, mint and sesame seeds.
