Subj : BH&G 2819 To : ALL From : DAVE DRUM Date : Tue May 25 2021 10:26:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Basil-Tomato Chicken Skillet Categories: Poultry, Gerbs, Vegetables, Mushrooms, Cheese Yield: 4 Servings 1 tb Olive oil 1 1/4 lb Skinned, boned chicken; in - bite-size pieces 2 cl Garlic; minced 1/2 ts Salt 1/4 ts Ground black pepper 1 c Quartered fresh mushrooms 1/2 c Chopped onion 3 c Red and/or yellow cherry - tomatoes; halved 4 c Fresh spinach 1/4 c Snipped fresh basil 2 tb Fine shredded Parmesan In a 12" skillet heat oil over medium-high heat. Add chicken and garlic; cook and stir for 4 to 5 minutes or until chicken is no longer pink. Sprinkle with salt and pepper. Remove from skillet. Add mushrooms and onion to skillet. Cook for 3 to 5 minutes or until mushrooms and onion are tender and lightly browned, stirring occasionally. Return chicken to skillet; stir in tomatoes. Cook about 2 minutes or until heated through. Add spinach and basil; toss just until spinach is wilted. Divide chicken mixture among dinner plates. Sprinkle with cheese.
