Subj : BH&G 2776 To : All From : Dave Drum Date : Fri May 21 2021 13:49:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Grouper w/Tropical Salsa Categories: Seafood, Nuts, Herbs, Dairy, Salsa Yield: 4 Servings 4 (8 oz ea) grouper or catfish - filets 1/2 c All-purpose flour 1/2 c Fine chopped pistachios or - almonds 1 ts Ground black pepper 1/2 ts Salt 1/2 ts Dried tarragon; crushed 1/2 ts Dried basil; crushed 1/4 c Milk 1/4 c Lemon-flavored olive oil 15 1/4 oz Can tropical fruit salad; - drained, coarse chopped 1 tb White balsamic vinegar 1 tb Lime juice 1 tb Snipped fresh cilantro Lime wedges (opt) Thaw fish, if frozen. Set oven to 450ºF/232ºC. Grease a 15" x 10" x 1" baking pan; set aside. Rinse fish; pat dry with paper towels. In a shallow dish combine the flour, pistachios or almonds, pepper, salt, tarragon, and basil. Place milk in another shallow dish. Dip fish in the milk and then coat with the flour mixture, patting flour mixture onto fish, if necessary. Place in an even layer in the prepared pan. Drizzle fish with oil. Bake for 12 to 15 minutes or until fish flakes easily when tested with a fork. Meanwhile, for salsa, in a small bowl combine the tropical fruit salad, vinegar, lime juice, and snipped cilantro.
