MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Huevos En Salsa
 Categories: Five, Salsa, Eggs, Cheese
      Yield: 4 Servings
 
      3 c  Salsa
      4 lg Eggs
    1/2 c  Crumbled queso fresco or
           - shredded cheddar cheese
           Fresh cilantro (opt)
           Corn tortillas; warmed
           - (opt)
 
  In a large skillet bring salsa just to boiling over medium
  heat; reduce heat to simmering.
  
  Break an egg into a cup and slip egg into the simmering
  salsa. Repeat with the remaining three eggs, allowing each
  egg an equal amount of space in the salsa. Simmer,
  covered, for 3 to 5 minutes or until egg whites are
  completely set and yolks begin to thicken but are not
  hard. Remove from heat.
  
  Sprinkle with queso fresco and, if desired, cilantro. If
  desired, serve with warmed tortillas.
  
  Makes: 4 servings
