Subj : BH&G 2667 To : All From : Dave Drum Date : Mon May 10 2021 09:21:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Simple Salsa Skillet Categories: Potatoes, Poultry, Vegetables, Salsa, Dairy Yield: 4 Servings 2 c Peeled, cubed potatoes 8 oz Chicken; in 1" pieces 1 tb Cooking oil 1 lg Bell pepper; julienned 1 lg Red bell pepper; julienned 15 1/2 oz Can whole kernel corn; - drained 16 oz Can black beans; rinsed, - drained 16 oz Jar salsa Sour cream Fresh cilantro; snipped - (opt) In a covered large nonstick skillet, cook potatoes in a small amount of boiling water, about 10 minutes, or until tender, stirring occasionally. Drain and set potatoes aside. In the same skillet, cook chicken in hot oil over medium heat for 2 minutes. Add pepper strips; cook 2 minutes more. Add cooked potato, corn, black beans and salsa. Stir gently to combine, then cook, covered, for about 10 minutes, stirring occasionally. Serve with sour cream and/or cilantro.
