Subj : BH&G 2651 To : All From : Dave Drum Date : Sun May 09 2021 20:37:06 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fettuccine w/Shrimp, Garlic & Broccoli Categories: Pasta, Vegetables, Seafood, Herbs, Chilies Yield: 4 Servings 2 ts Olive oil 1 md Sweet onion; diced 1 md Carrot; peeled, diced 1 1/2 ts Italian seasoning 1/2 ts Red pepper flakes 28 oz Can crushed tomatoes 4 cl Garlic; thin sliced 3/4 lb Medium shrimp; thawed 8 oz Whole-wheat fettuccine 3 c Broccoli florets Heat olive oil in a large skillet over medium heat. Add onion and carrot; saute 5 minutes. Add Italian seasoning and red pepper flakes; cook 5 minutes. Add tomatoes and garlic; reduce heat to low and cook, stirring occasionally, 10 minutes. Meanwhile, peel shrimp and remove tails; set aside. Prepare pasta according to package directions, adding broccoli florets to the pot for the last 2 minutes of cooking. Drain and set aside. Add shrimp to the tomato sauce; cook 2 to 3 minutes, until opaque. Serve shrimp and sauce over pasta and broccoli.
