Subj : BH&G 2647 To : All From : Dave Drum Date : Sat May 08 2021 13:30:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Scallop Couscous Paella Categories: Seafood, Pasta, Vegetables, Pork, Chilies Yield: 6 Servings 1 tb Olive oil 2 lg Red ball peppers; cored, - seeded, in 1/2" pieces 1 lg Onion; chopped 4 cl Garlic; chopped 14 1/2 oz Can chicken broth 1/2 ts Turmeric 1/2 ts Black pepper 1/4 ts Salt 1/2 ts Red pepper flakes 1 1/4 lb Sea scallops; rinsed 10 oz Box frozen peas; thawed 2 Chipotle chorizo sausages; - in 1/2" coins 6 1/2 oz Can chopped clams 3 c Whole-wheat couscous 1 Lemon; in wedges (opt) Heat oil in a large nonstick skillet over medium-high heat. Add red peppers, onion and garlic. Cook 6 minutes, stirring. Add broth, 1 cup water, turmeric, black pepper, salt and red pepper flakes. Bring to a simmer and add scallops. Simmer, covered, 3 minutes. Stir in peas, sausage and clams with their liquid. Simmer, covered, 2 minutes. Turn off heat; add couscous. Cover and let stand 5 minutes. Fluff couscous with a fork.
