Subj : BH&G 2635 To : All From : Dave Drum Date : Fri May 07 2021 20:34:12 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Petite Tenderloin w/Chipotle Sweet Potatoes Categories: Beef, Potatoes, Chilies, Vegetables, Sauces Yield: 2 Servings 8 oz Sweet potato; peeled, diced 1 tb Butter 2 ts Fine chopped chipotles in - adobo 2 (4 oz ea) filet mignon - steaks; 1" thick 1 1/2 ts Olive oil MMMMM--------------------CILANTRO CHIMICHURRI------------------------- 1/2 c Fine snipped fresh cilantro - leaves 2 ts Red wine vinegar 1 ts Olive oil 1 cl Garlic; minced 1/8 ts Salt In a covered medium saucepan cook sweet potatoes in a large amount of boiling water 15 to 20 minutes or until tender; drain well. Mash with a potato masher or beat with an electric mixer on low speed until smooth. Stir in light butter and chile peppers until well mixed. Meanwhile, trim any fat from steaks. Heat a large skillet over medium-high heat. Add oil; reduce heat to medium. Cook steaks 10 to 13 minutes or until medium rare, turning once. Transfer steaks to a platter. Cover with foil; let stand 5 minutes while preparing Cilantro Chimichurri. Serve steak with sweet potatoes. Top with the Cilantro Chimichurri. MAKE THE CILANTRO CHIMICHURRI In a small bowl stir together the cilantro, vinegar, oil, garlic, and salt. Spoon onto steaks and sweet potatoes.
