Subj : BH&G 2625 To : All From : Dave Drum Date : Thu May 06 2021 17:23:14 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chimichurri Steak Categories: Beef, Herbs, Chilies Yield: 2 Servings 2 (1 1/2" thick) beef top loin - or ribeye steaks 1/2 ts (ea) kosher salt & fresh Ground black pepper Cooking spray 1 c Firm packed fresh cilantro 1 c Firm packed fresh Italian - flat-leaf parsely leaves 1/4 c White wine vinegar 3 cl Garlic; cut up 1/2 ts Salt 1/2 ts Ground cumin 1/2 ts Crushed red pepper 1/4 c Olive oil MMMMM-----------------SIMPLE GRILLED VEGETABLES---------------------- 1 sm Zucchini and/or yellow - squash; halved lengthwise 1/2 sm Red onion; in 1/2" slices 1 tb Oil Lightly brush zucchini and/or yellow squash and red onion with vegetable oil. For a charcoal or gas grill, place vegetables directly over medium heat. Cover and grill until vegetables are tender, about 10 minutes. Remove and cool slightly. Cut vegetables into 1/2" pieces. FOR THE STEAKS: Allow steaks to stand at room temperature for 30 minutes. Set oven @ 400ºF/205ºC. Trim fat from steaks. Pat steaks dry with paper towels. Sprinkle 1/2 teaspoon kosher salt and the freshly ground black pepper over all sides of steaks; set aside. Coat a large oven-going grill pan or skillet lightly with cooking spray. Heat over medium-high heat; reduce heat to medium. Add steaks; cook about 4 minutes or until browned, turning once halfway through cooking time. Transfer pan to oven. Roast for 10 to 13 minutes or until medium-rare doneness. Transfer steaks to a serving platter. Cover with foil; let stand for 10 minutes. Meanwhile, for chimichurri, in a food processor or blender combine cilantro, parsley, vinegar, garlic, 1/2 teaspoon kosher salt, the cumin, and the crushed red pepper. With processor or blender running, slowly add oil in a thin steady stream through opening in lid, blending until mixture is smooth. Serve chimichurri with steaks.
