Subj : BH&G 2621 To : All From : Dave Drum Date : Thu May 06 2021 17:22:30 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Seafood Bruschetta Categories: Seafood, Breads, Herbs, Citrus Yield: 48 Servings 8 oz Fresh or frozen peeled and - deveined cooked shrimp 3 tb Olive oil 1 tb Lemon juice 1 tb Snipped fresh chives 1 tb Snipped fresh basil 1 tb Snipped fresh mint 2 cl Garlic; minced 1 c Cooked crabmeat; coarse - chopped +=OR=+ 6 oz Can crabmeat; drained, - flaked, cartilage removed 1 c Chopped roma tomatoes (3 - medium) 1/2 c Fine chopped onion 8 oz Loaf baguette-style French - bread Fresh ground black pepper Fresh mint sprigs (opt) Thaw shrimp, if frozen. Preheat broiler. Rinse shrimp; pat dry with paper towels. Coarsely chop shrimp; set aside. In a medium bowl combine 1 tablespoon of the oil, the lemon juice, chives, basil, snipped mint, and garlic. Add shrimp, crabmeat, tomatoes, and onion; toss gently to coat. Cut bread into 48 thin slices. Arrange bread slices on a large baking sheet. Brush one side of slices with the remaining 2 tablespoons oil; sprinkle lightly with pepper. Broil 3 to 4 inches from the heat for 2 to 3 minutes or until toasted, turning once. Using a slotted spoon, spoon seafood mixture onto oiled sides of toasted bread. If desired, garnish with mint sprigs. Serve immediately.
