Subj : St. Placid 03 To : All From : Dave Drum Date : Thu May 06 2021 17:10:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lake Placid Thai Sesame-Peanut Spaghetti Squash Categories: Squash, Vegetables, Nuts, Chilies Yield: 3 Servings 1 md Spaghetti squash 2 tb Olive oil 2 Red bell peppers; julienned 8 oz Baby mushrooms; sliced 4 oz Julienned carrots 4 oz Sprouts 1 bn Scallions; thin sliced, - bulbs discarded 6 Basil leaves, chopped 3 tb Sesame-peanut butter 2 tb Sesame seeds 1 tb Sesame oil 1 ts Ginger 1 ts Red chile flakes Garlic powder Salt Set oven @ 400ºF/205ºC. Cut spaghetti squash length wise and drizzle with olive olive and salt. Place on a baking sheet and bake for approximately 50 minutes or until soft. While spaghetti squash is baking, prepare and cut vegetables. Heat sesame oil in a large pan add veggies and cook until soft then basil & sprouts. Add in peanut butter and let melt along with seasonings. Sprinkle sesame seeds in and mix. Once spaghetti squash is cooked and cooled, scrape lengthwise with a fork to produce spaghetti-like noodles.
