Subj : St. Irene 09 To : All From : Dave Drum Date : Tue May 04 2021 13:35:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Irene's Rhubarb Custard Pie Categories: Pies, Pastry, Desserts Yield: 6 Servings 3 c Rhubarb; in 1" pieces 1 c White sugar 2 tb Butter 1 lg Egg 2 tb Flour 1 (9") uncooked pie shell 2 tb Brown sugar 3 tb Flour 2 tb Butter Place rhubarb in a bowl and cover with boiling water for about 5 minutes. Meanwhile, with a mixer, mix sugar, egg, butter and flour until smooth. Strain rhubarb well. With wooden spoon, add rhubarb to batter and mix. Pour into uncooked pie shell. Mix topping ingredients with a fork, and sprinkle over uncooked pie. Bake @ 375ºF/190ºC for 50 minutes or until set. Top with whipped cream if desired.
