Subj : St. Irene 03 To : All From : Dave Drum Date : Tue May 04 2021 13:31:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Irene's Chicken Categories: Five, Poultry, Potatoes Yield: 4 Servings 1 lg Garlic bulb 3 tb (to 4 tb) olive oil; extra - for drizzling 7 (to 8) chicken thighs; skin - on, bone in 8 (to 10) new potatoes, - halved 1 lg Red bell pepper; cored, - diced Set the oven @ 190ºC/375ºF (170ºC/340ºF fan). Sit the garlic bulb on a large, double-layer piece of foil, drizzle with oil and twist to enclose. Bake for 45 minutes or until a skewer can be easily inserted into the centre of the soft flesh. The garlic pulp will be blisteringly hot, so allow the bulb to cool before continuing. Cut the garlic bulb crosswise in half and squeeze out every last skerrick of golden paste and blend with the olive oil. Divide the garlic paste evenly among the chicken portions, spreading the paste between the skin and flesh. Place the chicken portions into a large, shallow-sided baking dish. Pile the potatoes and peppers into the centre and drizzle generously with extra olive oil. Bake in the oven for about one hour or until the chicken and potatoes are well cooked and golden.
