Subj : BH&G 2589 To : All From : Dave Drum Date : Sun May 02 2021 11:13:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cauliflower Hummus Categories: Dips, Vegetables, Citrus, Chilies, Herbs Yield: 18 Servings 1 md Head cauliflower; cored, in - florets 2 tb Tahini 2 tb Olive oil 2 ts Fine shredded lemon peel 1 tb Lemon juice 4 cl Garlic 1/2 ts Ground cumin 1/2 ts Salt 3 tb Snipped fresh cilantro 1/2 ts Crushed red pepper MMMMM--------------------------DIPPERS------------------------------- Snipped fresh cilantro Broken flatbread Crackers Baked pita bread chips Cucumber slices Baby carrots Sweet pepper strips Roma tomato weges In a covered medium saucepan cook cauliflower in a small amount of boiling water about 10 minutes or until tender; drain. Transfer cauliflower to a bowl of ice water until cool; drain. In a food processor combine cooked cauliflower, tahini, olive oil, 1 teaspoon of the lemon peel, the lemon juice, garlic, cumin, and salt. Cover and process until mixture is smooth. Add the cilantro and process for 5 seconds. Transfer hummus to a serving bowl. Cover and chill for at least 2 hours or up to 8 hours. Just before serving, in a small bowl stir together the remaining 1 teaspoon lemon peel, and the crushed red pepper. Sprinkle lemon peel mixture and additional cilantro over hummus.
