Subj : BH&G 2564 To : All From : Dave Drum Date : Fri Apr 30 2021 19:52:44 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Citrus Tuna Pasta Salad Categories: Pasta, Seafood, Citrus, Vegetables, Cheese Yield: 8 Servings 12 oz Dried mafalda pasta 18 oz (2 pkg) artichoke hearts; - thawed 18 1/2 oz (2 cans) chunk white tuna - (water pack); drained, - broken in chunks 2 c Sliced fresh mushrooms 2 c Chopped yellow sweet - peppers 1/2 c Sliced, pitted ripe olives Lemon Dressing (below) 2 c Cherry tomatoes; halved 1/4 c Fine shredded Parmesan - cheese MMMMM-----------------------LEMON DRESSING---------------------------- 2 ts Fine shredded lemon peel 1/3 c Lemon juice 1/3 c Rice or white wine vinegar 1/4 c Salad oil 2 tb Snipped fresh thyme or - basil +=OR=+ 2 ts Dried thyme or basil; - crushed 1 ts Sugar 1/2 ts Black pepper 4 cl Garlic; minced Cook pasta in a Dutch oven according to package directions, adding the artichoke hearts the last 5 minutes of cooking; drain. Rinse with cold water; drain again. Halve any large artichoke hearts. Transfer pasta and artichoke hearts to a very large bowl. Gently stir in tuna, mushrooms, sweet peppers, and olives. Pour Lemon Dressing over pasta mixture; toss to coat. Cover and chill for 4 to 24 hours. Before serving, gently stir in tomatoes and sprinkle with Parmesan cheese. Makes 8 servings. LEMON DRESSING: In a small bowl whisk together lemon peel, lemon juice, rice vinegar or white wine vinegar, salad oil, thyme or basil, sugar, black pepper, and minced garlic. Makes about 3/4 cup. TO TOTE: Transport salad, tomatoes, and Parmesan cheese in an insulated cooler with ice packs. FOR 4 SERVINGS: Prepare using method above, except cook pasta and artichoke hearts in a large saucepan.
