Subj : St. Zita 07 To : All From : Dave Drum Date : Mon Apr 26 2021 15:45:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Zita Nagy's Roasted Millet w/Butternut Squash & Tofu Categories: Grains, Squash, Citrus, Chilies Yield: 2 Servings 150 g Millet 300 g Firm tofu 350 g Butternut squash; peeled, - diced 3 cl Garlic; chopped 4 tb Tahini 2 ts Soy sauce 1 ts Chile flakes 2 ts Nutritional yeast (opt) Juice of 1 lemon Salt & pepper Oil Roast the millet in a dry pan for 5 minutes then set aside. Press the unnecessary liquid out of the tofu, then dice into small cubes (about 1 cm X 1 cm, 4/10" X 4/10"). Peel the butternut squash then dice into the same size like tofu. Set the oven @ 180ºC/356ºF. Arrange the tofu and butternut squash cubes on a baking sheet, sprinkle with 2 tablespoons coconut oil, season with salt and pepper. Roast for about 10 minutes then sprinkle with the chopped garlic and roast for another 10 minutes or until golden brown. Set aside. Cook the roasted millet in salted water according to package directions. Set aside. In a small bowl whisk together tahini, soy sauce, lemon juice, chile flakes and nutritional yeast.
