Subj : St. Cletus 01 To : All From : Dave Drum Date : Sun Apr 25 2021 17:02:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cletusfest Fried Bass Categories: Seafood, Potatoes, Citrus, Herbs Yield: 3 Servings 1 c Oil for frying; as needed 3 lg Eggs 1 tb Water 3 (6 oz ea) filets striped - bass, skinned 1 ts Cajun seasoning 1 ts Lemon pepper 1/2 c Flour 1 oz Pkg salt & vinegar potato - chips; crushed 1 Lemon; in wedges Heat oil in your camp skillet to 350+|F/175+|C. Whisk eggs and water together in a bowl; set the egg wash aside. Sprinkle the bass filets on both sides with Cajun seasoning and lemon pepper. Dredge filets in flour, and shake off any excess. Dip the filets in the egg wash, then dip filets in the crushed potato chips. Fry the fish in the preheated skillet until lightly browned, about 4 minutes per side. Serve with lemon wedges. UUD Notes: I dunno how far I'd want to backpack carrying shell eggs, oil, fresh lemons, packages of potato chips, etc. But, it's a nice recipe for tailgate camping.
