Subj : BH&G 2476 To : All From : Dave Drum Date : Wed Apr 21 2021 15:10:52 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Jalapeno Rellenos Categories: Chilies, Dairy, Cheese, Beer, Herbs Yield: 20 Servings 20 Jalapeno peppers 3/4 c Shredded Monterey Jack 4 oz Cream cheese w/chive & - onion 1/4 ts Ground cumin 3/4 c All-purpose flour 1/4 c Cornmeal 1/4 ts Baking powder 1/4 ts Salt 3/4 c Beer Oil for deep-fat frying Dairy sour cream (opt) Snipped chives (opt) Make a T-shape cut in the side of each pepper; remove seeds. FOR FILLING: Combine shredded cheese, cream cheese, and cumin until blended. Pack about 2 teaspoons of the filling into each pepper. FOR BATTER: In a bowl combine flour, cornmeal, baking powder, and salt. Add beer or milk. Beat until smooth. In a heavy saucepan or deep-fat fryer heat 2" cooking oil or melted shortening to 375ºF/190ºC. Dip stuffed peppers into batter. Fry several peppers at a time in hot fat, about 2 minutes on each side or until golden brown. Drain; keep warm in a 300ºF/150ºC oven while frying remaining peppers.
