MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Pedro's Mexican Special
 Categories: Five, Cheese, Dairy, Cgilies, Rice
      Yield: 7 Servings

    3/4 lb Monterey Jack cheese
      3 c  Dairy sour cream
      3 c  Rice; cooked
      8 oz (2 cans) peeled green
           - chilies; chopped
    1/2 c  Cheddar cheese; grated
           Salt & pepper

  Cut Monterey Jack into strips. Mix sour cream and
  chilies. Butter 1 1/2 quart casserole well. Season rice
  with salt and pepper. Layer rice, sour cream mixture and
  cheese strips in that order. Finish with rice on top.
  Bake @ 350+|F/175+|C for 30 minutes. During last minute,
  sprinkle with Cheddar and allow it to melt.

  Makes 6 to 8 servings.
