Subj : St. Leo 09 To : All From : Dave Drum Date : Wed Apr 14 2021 11:09:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Leo's & Leo's Ribs Categories: Pork, Herbs, Vegetables, Rubs Yield: 4 Servings 2 Slabs pork ribs 1 tb Hungarian-style sweet - paprika 1 tb Sunny Paris seasoning 1 1/2 ts Ground allspice 1 tb Granulated garlic powder 1/2 ts Penzeys pepper 1/2 c Brown sugar 2 tb Vinegar (if prebaking) Combine all of the spices and brown sugar. Mix well. Massage into the meat for 3 minutes, covering both sides of the ribs. Cover and refrigerate for 24-48 hours. Start your coals, adding wood chips that have been soaked in water. Do NOT put the ribs directly over the coals. Leo puts them in a smoker, which takes longer, but the meat is far away from the coals and requires the coals and wood chips to be replenished. It takes about 6 hours using a smoker. If using a grill, stack the coals on one side and place the ribs on the other side so they cook slowly. Grilling will take about 4 hours. If you are short on time, sprinkle the ribs with the vinegar and bake in a 300ºF/150ºC oven for about 2 hours and then transfer to the grill a bit closer to the coals so they can brown up for another hour.
