Spray a pie plate or oven proof baking dish with cooking spray and spread a thin layer of olive oil. Using a whisk or fork, whisk egg with water to create an egg wash. On a lightly floured surface, use a rolling pin to roll out bread dough into a large rectangle. Dough should be pretty thin, less than ¼ inch thick. Brush dough with egg wash. Sprinkle oregano, basil, garlic powder and red pepper flakes evenly across dough. Layer pepperoni slices and mozzarella cheese evenly across bread dough, leaving about a 1/4 to 1/2 inch border along all four sides of the dough. Slowly and carefully, tightly roll up the dough lengthwise (hot dog style if you will). Once rolled into one long log, pinch the ends of the pepperoni roll closed and use a little bit egg wash to close the seam across the entire roll. Coil pepperoni bread in greased, glass pie plate. Brush again with egg wash. Sprinkle with additional spices, to taste. Bake for 35-40 minutes until cheese is melted and crust is golden brown. Serve hot with a side of sauce for dipping!!
