Subj : St. Timothy 05 To : All From : Dave Drum Date : Mon Apr 05 2021 12:28:08 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Timothy's White Chilli Categories: Poultry, Herbs, Chilies, Beans, Cheese Yield: 6 Servings 45 oz (3 cans) white beans; - drained 2 lb Diced or shredded cooked - chicken 1 tb Olive oil 2 md Onions; chopped 8 oz (2 cans) chopped green - chilies 2 ts Cumin 1 1/2 ts Oregano 1/4 ts Ground cloves 1/4 ts Cayenne pepper 6 c Chicken broth 3 c Shredded Monterrey Jack - cheese Heat oil in a soup kettle or large dutch oven over medium to medium-high heat (you could also make this dish in a slow cooker for a great weekday dinner!) Once the oil is hot, add the onions and saute until they are translucent. You dongCOt want to brown or caramelize them, adding a pinch of salt will help here. Add in all of the other ingredients EXCEPT the beans and the cheese, and let it cook (covered) for an hour. At this point, you can turn the heat off and wait until you are ready to eat. About 15 or so minutes before you are ready to serve, heat up the chilli and add in the beans and 2 cups of the cheese and stir with a wooden spoon until the cheese melts and the beans are heated through.
