Subj : BH&G 2288 To : ALL From : DAVE DRUM Date : Fri Apr 02 2021 15:25:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Caribbean Pork Chilli Categories: Pork, Chilies, Herbs, Vegetables, Fruits Yield: 6 Servings 1 1/2 lb Pork loin; in 1" pieces 1 tb Chilli spice mix 2 cl Garlic; minced 1/2 ts Ground chipotle 1/2 ts Ground cumin 1/4 ts Salt 1 tb Oil 29 oz (2 cans) diced tomatoes; - undrained 15 oz Can black beans; rinsed, - drained 8 oz Can tomato sauce 1 c Whole kernel corn 1 md Mango; halved, seeded, - peeled, chopped 1/4 c Snipped fresh cilantro 1/4 c Red onion shards In a medium bowl combine pork, chilli spice, garlic, ground chipotle, cumin, and salt; toss to coat. In a large nonstick skillet heat oil over medium-high heat. Cook half of the pork in hot oil until brown on all sides, stirring occasionally. Transfer to a 3-1/2- or 4-quart slow cooker. Repeat with the remaining pork. Add tomatoes, beans, tomato sauce, and frozen corn to pork in slow cooker. Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2 1/2 hours. Combine mango, cilantro, and, if desired, onion shards. Spoon over top of each serving.
