      Title: Urban Bean Salad
 Categories: Beans, Vegetables, Sauces
      Yield: 15 Servings
 
    1/2 c  Dry chick peas
           +=SOAKED IN=+
  1 1/2 c  Water overnight
      1 c  Dry red kidney beans
           +=SOAKED IN=+
      2 c  Water overnight
  1 1/2 c  Frozen corn
      4 c  Fresh green beans; in 1"
           - pieces
      1 c  Sliced onion; in rings
      1 c  Sliced bok choy
    1/4 c  Diced red or orange bell
           - pepper
      1 c  Vinegar
    1/2 ts Dijon mustard
    1/4 ts Celery salt
      1 c  Sugar
           +=OR=+
    1/4 c  Honey
      2 tb Olive oil
 
  Cook chick peas for five minutes, pour in salad bowl,
  including liquid.
  
  Cook kidney beans for 7-10 minutes until tender. Drain
  and add to salad bowl.
  
  Add corn, green beans, onion rings, bok choy, and bell
  pepper.
  
  In another bowl, combine vinegar, mustard, celery salt,
  sweetener or honey, and oil.
  
  Stir until dissolved. This takes a few minutes.
  
  Pour over bean mixture.
  
  Cover and store in refrigerator. Let stand at least 24
  hours before serving.
