Subj : BH&G 2277 To : ALL From : DAVE DRUM Date : Thu Apr 01 2021 15:58:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Greek Chicken Salad - Diabetic Living Categories: Salads, Poultry, Herbs, Citrus, Squash Yield: 4 Servings 1 1/2 lb Skinned, boned chicken 1 tb Lemon juice 1 tb Olive oil 1 tb Snipped fresh oregano +=OR=+ 1 ts Dried oregano; crushed 2 cl Garlic; minced 1/4 ts Ground black pepper 3 md Cucumbers; seeded, coarse - chopped 2 md Red and/or yellow tomatoes; - coarse chopped 1/2 c Sliced red onion Mixed salad greens 1/3 c Bottled creamy cucumber - salad dressing 1/2 c Crumbled feta cheese 1/4 c Pitted Kalamata olives or - ripe olives Place chicken in a resealable plastic bag set in shallow dish. For marinade, in small bowl combine lemon juice, oil, oregano, garlic, and pepper. Pour over chicken. Seal bag; turn to coat chicken. Marinate, refrigerated for 4 to 24 hours, turning bag occasionally. Meanwhile, in medium bowl combine cucumbers, tomatoes, and onion; set aside. Drain chicken, discarding marinade. Place chicken on rack of uncovered grill directly over medium coals. Grill 12 to 15 minutes or until chicken is tender and no longer pink, turning once. Transfer chicken to cutting board; cut into bite-size pieces. Toss with cucumber mixture. Serve on salad greens. Drizzle with salad dressing. Sprinkle feta cheese and olives. Makes 4 servings.
