Subj : BH&G 2276 To : ALL From : DAVE DRUM Date : Thu Apr 01 2021 15:57:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Shrimp & Roasted Red Peppers Categories: Seafood, Vegetables, Chilies, Herbs, Pasta Yield: 6 Servings 1 1/2 lb Peeled, deveined medium - shrimp; fresh 1/4 c Butter 2 tb Olive oil 1/3 c Fine chopped onion 6 cl Garlic; minced 1/2 ts Crushed red pepper 12 oz Jar roasted red sweet - peppers; drained, chopped 1/2 c Dry white wine 1/2 c Whipping cream 1/4 c Snipped fresh basil 1 c Fine shredded Parmesan - cheese 12 oz Dried pasta; cooked, - drained Rinse shrimp; pat dry with paper towels. Set aside. In a large skillet, heat butter and oil over medium-high heat until butter is melted. Add onion and garlic. Cook and stir for 1 to 2 minutes or just until onion is tender. Add shrimp and crushed red pepper; cook and stir for 2 minutes. Add roasted peppers and wine. Bring to boiling; reduce heat. Simmer, uncovered, about 2 minutes or until shrimp are opaque, stirring occasionally. Stir in cream. Return to boiling; reduce heat. Boil gently, uncovered, for 1 minute. Stir in basil.
