Subj : St. Guido 11 To : All From : Dave Drum Date : Tue Mar 30 2021 14:54:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: The Big Guido Categories: Breads, Beef, Pork, Vegetables, Cheese Yield: 6 Servings 1 Loaf french bread 1/4 lb Black forest ham 1/4 lb Mortadella 1/4 lb Hard salami 1/4 lb Pepperoni; sliced 1 lb Provolone cheese; sliced 1 lb Mozzarella cheese; sliced Green bell pepper; sliced Red onion; sliced Pickled banana pepper rings Black olives; sliced Garlic salt Butter MMMMM---------------------SUNSHINE SUB SAUCE-------------------------- 1/4 c Red wine vinegar 1/2 ts Dijon mustard 1 tb Sugar 1/2 ts Dried Italian seasoning 1/4 ts Sea salt 1/4 ts Ground black pepper 1 ts Garlic powder 1/2 c Olive oil Make the Sunshine Sub Sauce and set aside. Place all of the ingredient in a food processor or blender except for the olive oil. Process the mixture on low speed while slowly drizzling in the olive oil. Maintain processing until all the oil has been added and the mixture has emulsified. The sub sauce can be stored in a condiment bottle in the fridge for 2 weeks. Set the oven @ 350ºF/175ºC. Cut the french bread lengthwise. Put a layer of provolone cheese. Drizzle some of the Sunshine Sub Sauce on. In a large skillet or griddle over medium heat, brown the hard salami. Layer over the provolone. Wipe the grease from the skillet with a paper towel. In the same skillet or griddle, brown the mortadella and layer over the salami. Brown the pepperoni and layer over the mortadella. Brown the ham and layer over the pepperoni. Add a layer of mozzarella cheese. (If you can use sliced mozzarella; use that. Shredded is a pain) Now add the bell pepper, red onion, black olives, and mild banana peppers. Add some more Sunshine Sub Sauce and put the lid on. Brush the top with butter or margarine and sprinkle on some garlic salt. Wrap in foil and bake for 20-25 minutes. Serve hot to your hungry clan.
