      Title: Uncle Guido's Gazpacho
 Categories: Soups, Vegetables, Citrus, Herbs
      Yield: 3 Servings
 
  1 1/2 lb Tomato; peeled, seeded,
           -diced
      1 c  Chopped cucumber; peeled,
           - seeded
    1/2 c  Chopped red onion
    1/2 c  Red bell pepper; seeded,
           - diced
      1    Jalapeño; seeded, minced
      1 cl Minced garlic
      1 c  Tomato juice
    1/4 c  EVOO
      1    Lime; juiced
      2 ts Balsamic vinegar
      2 ts Worcestershire
      1 ts Kosher salt
    1/2 ts Cumin
    1/4 ts Black pepper
      6    Basil leaves; chiffonade
 
  Combine ingredients in large bowl.
  
  Liquefy 1 1/2 cups of mix in blender and return to bowl.
  
  Top with basil chiffonade.
  
  Refrigerate before serving with bruschetta.
