Subj : BH&G 2246 To : ALL From : DAVE DRUM Date : Mon Mar 29 2021 13:52:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Kickin' Chicken Chilli Categories: Poultry, Stews, Vegetables, Beans Yield: 4 Servings 2 lb Skinned, boned chicken; in - 1" pieces 2 ts Ground cumin 1/4 ts Salt 1 tb Oil 16 oz Jar green salsa 16 oz Pkg frozen pepper stir-fry - vegetables 15 oz Can cannellini beans; rinsed - drained 1 md Onion; diced fine 2 cl Garlic; minced 14 1/2 oz Can diced tomatoes w/green - chilies Dairy sour cream (opt) Shredded cheese (opt) In a large bowl, toss chicken with cumin and salt to coat. In a large skillet, cook chicken, half at a time, in hot oil over medium heat until no longer pink. Drain off fat. Place chicken in a 4- or 5-quart slow cooker. Stir in salsa, stir-fry vegetables, beans, and undrained tomatoes. Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2-1/2 hours. Reserve 3 cups of the chili; store as directed below. Serve remaining chili. If desired, top with sour cream and cheese. Makes 4 (1-1/2-cup) servings and reserves. TO STORE RESERVES: Place chilli in an airtight container. Seal and chill for up to 3 days.
