Subj : BH&G 2243 To : ALL From : DAVE DRUM Date : Mon Mar 29 2021 13:50:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Flatbread Panzanella w/Watermelon, Feta & Mint Categories: Breads, Fruits, Herbs, Cheese, Vegetables Yield: 6 Servings 3 Whole wheat pita bread - rounds; halved across, - split horizontally 4 c Torn romaine lettuce 2 c Watermelon; in 1" cubes 1 c Chopped tomatoes 1/2 c Chopped red onion 1/4 c Snipped fresh Italian - (flat-leaf) parsley 1/4 c Snipped fresh mint 3 tb Lemon juice 3 tb Olive oil 1/2 ts Salt 1/2 c Crumbled feta cheese Preheat broiler. Arrange pita bread pieces, cut sides up, on a baking sheet. Broil 4 inches from the heat for 1 to 2 minutes or until toasted and crisp. Cool on the baking sheet. Break into bite-size pieces. In a very large bowl gently toss together lettuce, watermelon, tomatoes, red onion, parsley, and mint. In a small bowl whisk together lemon juice, oil, and salt. Add lemon juice mixture to lettuce mixture; toss to coat. Add pita pieces; toss to combine. Sprinkle with cheese. Serve immediately.
