Subj : St. Gladys 04 To : All From : Dave Drum Date : Sun Mar 28 2021 13:11:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mama Gladys' Meatloaf Categories: Beef, Pork, Poultry, Vegetables, Herbs Yield: 3 Servings MMMMM--------------------------MEATLOAF------------------------------- 500 g Veal mince; coarse 250 g Pork shoulder; minced - coarse 250 g Pork back fat; minced Coarse 250 g Bacon; minced coarse 250 g Chicken; minced coarse 250 g Minced honey ham 2 lg Eggs 227 g Bag panko breadcrumbs 1 tb Thyme 25 ml Port 25 ml Sherry 4 Eschalots; diced small 3 Cloves garlic; diced small 1 bn Parsley; fine chopped 1 bn Thyme; leaves only 2 bn Chives; fine chopped MMMMM-----------------------MUSHROOM GRAVY---------------------------- 10 lg Field mushrooms; chopped 5 cl Garlic; peeled 1 bn Thyme; rough chopped 28 g Pkt dried porcini mushrooms 2 tb Virgin olive oil 1 l Veal stock FOR THE MEATLOAF: In a large mixing bowl combine all meatloaf ingredients and mix well, using your hands. Lay baking paper into terrine mould and fill with the meat mix, leaving 1cm from top of mould. Bake for 35 minutes @ 175ºC/350ºF or until cooked all the way through. FOR THE MUSHROOM GRAVY: In a medium saucepan, saute field mushrooms, garlic and thyme in oil until soft. Add stock and porcini mushrooms, bring to the boil and simmer until reduced by half. Strain.
