Subj : BH&G 2211 To : ALL From : DAVE DRUM Date : Fri Mar 26 2021 15:37:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Whitefish w/Roasted Asparagus Categories: Seafood, Vegetables, Herbs, Citrus Yield: 4 Servings 1 lb Skinless whitefish filets; - 1/2" thick 1/2 c Chopped onion 1/2 c Chopped carrot 1/4 c Chicken broth 2 cl Garlic; minced 1/4 ts (ea) salt, smoked paprika & - black pepper 12 oz Fresh asparagus spears; - trimmed, bias-sliced in 1" - pieces Thaw fish, if frozen. Rinse fish; pat dry. Cut fish into 4 serving-size portions; set aside. In a 2-quart rectangular baking dish stir together onion, carrot, broth, and garlic. Top with fish fillets, tucking under any thin edges. Sprinkle with salt, paprika, and pepper. Top with asparagus. Bake, covered, in a 450ºF/232ºC oven for 15 to 20 minutes or until fish flakes easily when tested with a fork. Serve fish with vegetables. Makes 4 servings.
