MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Harriet's Bran Muffins
 Categories: Breads, Fruits, Nuts
      Yield: 12 Servings
 
  1 1/4 c  Bran
      1 c  Milk
    1/2 c  Honey
    1/4 c  Oil
      1 c  Whole wheat flour
      1 ts Grated orange rind
      1 lg Egg
    1/2 c  Raisins OR chopped dates
  2 1/2 ts Baking powder
    1/2 ts Baking soda
           Chopped nuts
 
  Mix egg, oil, milk, honey, bran and raisins or dates.
  Let stand 5 minutes. Mix flour, baking powder and soda.
  Fold in gently. If desired, add nuts and orange rind.
  Bake @ 400ºF/205ºC for 12-18 minutes (watch carefully)
  until toothpick comes out clean when inserted. Store
  cooled muffins in sealed plastic bags.
