Subj : BH&G 2209 To : ALL From : DAVE DRUM Date : Thu Mar 25 2021 15:35:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fish & Corn Chowder Categories: Soups, Seafood, Vegetables, Cheese, Dairy Yield: 4 Servings 12 oz Skinless cod, cusk, haddock, - or pike filets 3/4 c Chicken broth 1 md Carrot; shredded 1/2 Rib celery; chopped 1/2 sm Bell pepper; chopped 17 oz Can cream-style corn 12 oz Can evaporated milk 1 c Shredded process Swiss - cheese Celery leaves (opt) Thaw fish, if frozen. Rinse fish. Cut into 3/4" pieces. Set aside. In a medium saucepan combine chicken or vegetable broth, shredded carrot, chopped celery, and sweet pepper. Bring mixture to boiling; reduce heat. Cover and simmer for 2 minutes. Stir in corn and evaporated milk. Bring mixture to boiling, stirring occasionally. Add fish; reduce heat. Cover and simmer gently for 3 to 5 minutes or until fish flakes easily with a fork. Gradually add cheese, stirring until melted. Garnish with celery leaves, if desired. Makes 4 servings.
